Ingredients
4 chicken breasts
2 lemons, juiced
3 tbsp olive oil
2 garlic cloves, minced
1 tsp dried oregano
Salt and pepper to taste
1 cup couscous
1 cup mixed vegetables (carrots, broccoli, bell peppers), chopped
Preparation
Step 1. In a bowl, mix lemon juice, olive oil, garlic, oregano, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
Step 2. Cook couscous according to package instructions. Set aside.
Step 3. Heat a skillet over medium heat. Cook chicken breasts for 5-7 minutes on each side, until fully cooked.
Step 4. In the same skillet, sauté mixed vegetables until tender, about 5 minutes.
Step 5. Serve chicken over couscous with a side of sautéed vegetables.
