Grilled Fish Tacos with Mango Salsa

About the Recipe

Ingredients

  • 4 white fish fillets (I prefer cod)

  • 2 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt and pepper to taste

  • 1 mango, diced

  • 1/2 red onion, diced

  • 1/4 cup fresh cilantro, chopped

  • 1 lime, juiced

  • 8 corn tortillas


Preparation

Step 1. Preheat grill to medium-high heat. Brush fish fillets with olive oil and season with cumin, paprika, salt, and pepper.


Step 2. Grill fish for 3-4 minutes on each side until fully cooked.


Step 3. In a bowl, combine mango, red onion, cilantro, and lime juice to make the salsa.


Step 4. Warm tortillas in a dry skillet or briefly grill on each side until warm and pliable.


Step 5. Assemble tacos by placing grilled fish on each tortilla and topping with mango salsa. Serve.
